Vansauwa’s Tacos And Vegan Eats Will Return In 2024

Co-owners of a popular southwestern Kentucky food truck, Zirconia and Desaepa Vansauwa have full intentions of bringing their business back online in 2024.

Parked in Hopkinsville’s Five Below parking lot this past Saturday, Zirconia told the News Edge she was preparing for another busy day at Vansauwa’s Tacos and Vegan Eats — when smoke quickly turned into fire.

She noted that the fire began behind the grill.

This truck, she added, has been a lifelong dream of her husband.

The 2023 cooking campaign, she said, proved to be well worth it for the family and the business.

For years, Zirconia balanced work between the food truck and editorial duties of the Kentucky New Era.

So when the COVID-19 pandemic began in early 2020, she previously stated it wasn’t easily clear how busy the food truck would become. Local journalism and cooking professionally were, to her, both very important roles — and as such, she shifted full-time to the food truck, and later took a key position with Sanctuary, Inc.

She said their business model was always going to come with a special twist, especially since she and her husband aren’t vegan.
